Cheesecake med blåbærkompot

Jeg elsker cheesecake – men har aldrig været god til at lave dem. Men denne cheesecake, der skal i ovnen, er virkelig nem, og smager fantastisk! Den er inspireret af Annemette Voss fra tv-programmet ’Den store bagedyst’ og bages af to omgange (først bund + fyld og herefter hældes toppen på). God fornøjelse.

Ingredienser (til 8 pers):

Bund:
Smagsneutral olie til pensling
75 g smør
200 g digestive kiks

Fyld:
400 g flødeost, naturel
2 æg (str L)
100 g sukker
½ stang vanille

Top:
50 g sukker
4 dl creme fraice 38%
½ stang vanille

Blåbærkompot:
300 g blåbær (friske eller frosne)
½ dl vand
50 g sukker
Evt. lidt citronsaft

 

Tænd ovnen på 190 grader varmluft. Smør en springform (ø20-23) med olie.

Bund:
Smelt smør. Knus kiksene grundigt og bland sammen med det smeltede smør. Tryk kiksemassen fast sammen i springformens bund.

Fyld:
Skrab kornene fra vanillestangen ud og tryk sammen med lidt af sukkeret. Rør sukker, vanillesukker, æg og flødeost virkelig godt sammen. Fyld flødeostecremen ovenpå kiksebunden og bag kagen i ca 20 min, til den har sat sig. Tag kagen ud af ovnen og lad den køle lidt, inden top-fyldet kommes på.

Top:
Skrab kornene fra vanillestangen ud og tryk sammen med lidt af sukkeret. Bland sukker, vanillesukker og creme fraice godt sammen og fordel det ovenpå den let afkølede ostemasse. Sørg for en jævn og glat overflade. Bag kagen færdig i ovnen i ca 10 min ved 190 grader. Lad kagen køle lidt af inden den stilles i køleskab natten over (eller 6-8 timer).

Blåbærkompot:
Kog blåbær, sukker, vand og evt. lidt citronsaft op. Lad det simre i et par minutter, jo længere kompotten koger ind, desto tykkere vil konsistensen være til sidst. Jeg har kogt min kompot i cirka 15 min, så den nærmest ligner marmelade.

Server den kolde cheesecake med blåbær og blåbærkompot.
